Instant Pot Mexican Recipes – 15 Best Food Ideas for 5 De Mayo

Instant pots are now becoming everyone’s best friend especially if you are a busy person who has no time to spare in preparing your own meals. The beauty of an instant pot is that it reduces your cooking time by up to 70% when compared with other methods such as boiling, steaming, oven cooking, or slow cooking. It drastically reduces your usual cooking time by raising the boiling point of water and trapping the steam. Through this method, foods retain most of their nutrients and flavor since less water is used. So, through instant pots, not only do you get convenience but you also get a healthier option! 

Instant pots can cook a variety of meals and dishes and this includes preparing your own rice. If you are craving for something that is rich in flavor, then why not make your own Mexican rice? You just need a few ingredients such as:

  • 1 tablespoon of cooking oil
  • 2 large cloves garlic, minced
  • ½ medium onion, finely chopped
  • 1 cup of rice grain
  • 1 ½ cups low-sodium chicken stock
  • ½ cup tomato sauce
  • 1 teaspoon salt
  • ¼ teaspoon ground cumin
  • 1 pinch cayenne pepper

Instructions:

  • Turn on your instant pot to medium and select the saute function. Cover the bottom of the pot with cooking oil and stir in your onions until soft. This will take about 4-5 minutes. Add garlic after for about 30 seconds. 
  • Add rice to your instant pot and mix until coated with oil and is lightly browned. Pour your chicken stock and stir. Mix in the tomato sauce, salt, pepper, and cumin then close the lid. Seal the vent and adjust the function to high pressure. 
  • Set the timer to 7 minutes and allow 10-15 minutes for pressure to build. 
  • Carefully release the pressure for about 5 minutes. Unlock then remove the lid. 
  • Stir the rice and serve.

Instant pot Mexican chicken soup

Instant pots are very convenient when you want to prepare or heat some soup. Unlike your usual method of cooking soup, instant pots will immediately warm up your soup in no time! And if you want something filling and delicious, then try this Mexican chicken soup recipe!

Ingredients: 

  • 1 1/4 lb chicken breast
  • 4 cups chicken stock or broth
  • 2 tbsp olive oil
  • 1 can black beans
  • 1 can corn
  • 1 can crushed tomatoes
  • 1/4 tsp red pepper flakes
  • Jalapeno (if you want some spice) 
  • Onion
  • Garlic
  • Salt 
  • Pepper

Instructions

  • Turn on your instant pot to saute function. Add oil, onion, and garlic and saute until onion is soft and translucent, 
  • Add stock, chicken, beans, tomatoes, and corn. Stir well.
  • Close and lock the lid and adjust to high pressure. Set the timer for about 17 minutes, and allow 10 to 15 mins for pressure to build. 
  • Release pressure carefully for about 5 minutes. Unlock and remove the lid. 
  • Remove chicken and shred using two forks. When done, transfer the shredded chicken back into the pot. 
  • Add remaining ingredients including the rest of the chicken stock and your seasonings. Stir well. 
  • Cover the pot and cook on high pressure for 3 minutes. Quickly release the pressure when done. 
  • Serve.
