How do you make vegan cookies from scratch?

Being vegan or going on a plant-based diet does not mean that you have to say goodbye to all the tasty treats and baked goodies like cookies! In fact, yes, vegan cookies do exist! And aside from it basically tastes the same as your usual cookies, vegan cookies actually have notable health benefits. Since cholesterol is found only in animal products, vegan food means cholesterol-free eating! Moreover, a vegan’s intake of saturated fat is generally low which avoids the risk of heart disease, cancer, and other health risks. 

And I know what you are thinking, cookies won’t be complete without chocolate chips! But are chocolate chips vegan? To answer this question, yes, chocolate itself is vegan. While milk is sometimes added, there are still (a lot) of chocolate brands out there who sell vegan chocolate chips and chocolate bars.

Now that that’s all settled, instead of going out to search for some vegan cookies, why not make your own? Nothing beats a warm homemade cookie, anyway! 

Ingredients

1 cup white or oat flour

½ tsp baking soda

¼ cup sugar

¼ cup brown or coconut sugar

¼ tsp salt

2 tbsp oil

2 tbsp vegan milk

⅓ cup chocolate chips 

¼ tsp vanilla extract

Instructions

Combine all the dry ingredients in a bowl and once mixed, stir in the wet ingredients to form a dough. Keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra milk.

Once cookie-dough is achieved, form into one big ball then refrigerate for at least 2 hours or freeze until the dough is cold. 

Once chilled, preheat oven to 325 F. Mold some dough balls and place them on a greased baking tray leaving enough room between cookies. 

Bake 11 minutes on the center rack and let cool on the baking tray for about 10 minutes and wait for them to firm up. Serve.

Baked cookies can last for 2-3 days.

Vegan oatmeal cookie recipe

If you are an oatmeal fanatic, then it is good to know that you can actually make cookies out of them! And what’s more is that they are really delicious! You really only need a few ingredients and some simple steps to follow:

Ingredients

1 ½ cup rolled oats

1 cup all-purpose flour

1 cup dried coconut

1 tsp baking soda

1 tsp cinnamon 

1 cup brown sugar

½ cup vegan butter

1 tbsp soy milk

3 tbsp maple syrup

1 tsp vanilla extract

½ tsp salt

Instructions

Preheat oven to 350F. Add the rolled oats, flour, coconut, baking soda, salt, and cinnamon to a mixing bowl and stir together. 

Cream the vegan butter and brown sugar together then add syrup and vanilla.

Mix the dry ingredients into the wet ingredients until the mixture turns crumbly.

Add soy milk and mix. 

Roll into balls and place on a parchment lined baking tray. 

Bake for about 15 minutes or until the edges are firm and the top is lightly brown. 

Remove from the oven and allow to cool for a few minutes. 

Serve.
