First, you have to salt your zucchini and slice them into relatively large and thick pieces. The best zucchinis to fry are the small ones since their flesh is firm. Then, cook your zucchini over dry, high heat to caramelize the flesh to prevent it from getting soggy. Another tip is to not move the zucchini that much while you are cooking it. Then you need to get it out of the pan quickly before your zucchini starts to seep water. And then you can serve your fried zucchinis immediately.
