Cold Vegan Side Dishes – Most Popular Healthy Vegan Sides

What are the most popular vegan side dishes?

Going vegan is a great opportunity to learn more about nutrition and cooking. And if you are looking to lose weight or simply improve your diet, then going vegan is your best choice. A vegan diet is based on nutrients from plant foods which allows more room in your diet for health-promoting options like whole grains, fruit, nuts, seeds and vegetables, which are packed full of beneficial fibre, vitamins and minerals.

Studies show that vegans have better heart health and lower odds of having certain diseases. Those who skip meat have less of a chance of becoming obese or getting heart disease, high cholesterol, and high blood pressure. Vegans are also less likely to get diabetes and some kinds of cancer, especially cancers of the GI tract and the breast, ovaries, and uterus in women.

If you are just starting out, then here are some tips on how you can transition to a vegan diet:

  • eat at least 5 portions of a variety of fruit and vegetables every day
  • base meals on potatoes, bread, rice, pasta, or other starchy carbohydrates (choose wholegrain where possible)
  • have some dairy alternatives, such as soya drinks and yogurts (choose lower-fat and lower-sugar options)
  • eat some beans, pulses, and other proteins
  • choose unsaturated oils and spreads, and eat in small amounts
  • drink plenty of fluids (the government recommends 6 to 8 cups or glasses a day)

Cold vegan side dishes

There may be days where you just want a quick cold side dish maybe during the summer months or when you just want a quick and healthy meal without a lot of preparation and cooking time. A great example of a cold vegan side dish is a cold pasta salad which is perfect for potlucks, picnics, and BBQ party! Here is an easy recipe on how you can make your own cold vegan pasta salad:

INGREDIENTS

10 ounces pasta

1 Tablespoon olive oil extra virgin

3/4 cup vegan basil parsley pesto sauce

1 cup cherry tomatoes cut in half

3/4 cup cucumbers sliced

3/4 cup bell peppers chopped

1/4 cup red onions diced

salt & pepper to taste

INSTRUCTIONS

After boiling your pasta, drain and rinse under water to get rid of excess starch. If you are serving it for later, lightly drizzle one tablespoon of olive oil onto your pasta to keep them from sticking together. Add the pasta, tomatoes, cucumbers, bell peppers, and red onion into a large bowl. Keep in the refrigerator with plastic wrap until ready to serve cold. Gently toss with the vegan pesto sauce and serve immediately.
