19. Gluten-Free Casserole Turkey Enchilada Baked

I wasn’t really that into Mexican casseroles before I had my first taste of turkey enchilada back in College. A really close friend of mine was the one who introduced it to me. It was Thanksgiving and since she had already known me for like forever, her family loved me enough to invite me for Thanksgiving dinner.

I’m really close with everyone there so I was more than thrilled to come. Turkey enchilada casseroles were a common favorite among the household. Even though I wasn’t a complete fan when it comes to Mexican food, I wanted to give it a try as well. My taste for food has never been the same ever since.

There’s only one problem. Eating a lot of Turkey Enchilada can really mess up your shape. And since reunions and gatherings never stop from where I grew up, I started to play with the dish a bit.

And then lo and behold, I was able to come up with my very own Gluten-Free Turkey Enchilada Baked recipe. It’s simply going to be one of the most delicious things you’ll ever consume.

I love almost everything that comes in pink. Evidently, the same is true even with food. Strawberries are one of my favorites.

I can even remember that when I was still a young girl, I would come with my family to some fast-food chain near our school.

I couldn’t remember the name of the fast food anymore. But we would usually go there to buy ice cream and I would always go for the strawberry jelly-topped ice cream.
