The Asian-inspired vegetable soup is a really easy and hassle-free soup to make which includes bok choy, Chinese cabbage, ginger, garlic, mushrooms, scallions, and more. If you are interested with this hearty soup, then here’s how to prepare it:


2 cup(s), chopped, Uncooked bok choy

2 cup(s), chopped, Uncooked Chinese cabbage

Garlic clove(s)

3 medium clove(s), minced

Ginger root

¼ cup(s), thinly sliced and julienned

Uncooked oyster mushroom(s)

Uncooked scallion(s)

Canned water chestnut(s)

½ cup(s), thinly sliced Sweet red pepper(s)

¼ tsp Crushed red pepper flakes

Fat free reduced sodium vegetable broth

Snow peas

Low sodium soy sauce



Put bok choy, Chinese cabbage, garlic, ginger root, mushrooms, scallions, water chestnuts, red pepper, red pepper flakes and broth into a large soup pot, and stir to combine. Cover and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for about 10 minutes. Toss in snow peas during the last 3 to 4 minutes of simmering.

Stir in soy sauce and cilantro, and serve. 

Weight Watchers Cabbage soup

Another great soup for weight loss is a cabbage soup. In fact, there is a diet called Cabbage soup diet which is a strict diet that can make you lose up to 10 pounds! With that said, here’s an easy Weight Watchers cabbage soup recipe you can try:


3 cups nonfat beef broth

2 garlic cloves, minced

1 tablespoon tomato paste

2 cups chopped cabbage

1⁄2 yellow onion

1⁄2 cup chopped carrot

1⁄2 cup green beans

1⁄2 cup chopped zucchini yellow or green

1⁄2 teaspoon basil

1⁄2 teaspoon oregano

salt & pepper


Spray pot with non stick cooking spray. Saute onions carrots and garlic for 5 minutes. Add broth, Tomato paste, cabbage, green beans, basil, oregano and salt & pepper to taste.

Simmer for about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
